What's to Eat?? Skinny Double Chocolate Chip Muffins!


Heavenly and Healthy Double Chocolate-Chip Muffins!

Today's recipe is a very sweet one and yet healthy for you! Sounds like an irony right? Well this is the only type of irony I like, a healthy, delicious food one!  It's the perfect morning breakfast snack, on the go or to enjoy at the table; heck, you can snack on it all day! This double chocolate chip will leave you beyond satisfied! 
This recipe is so easy that my brother in law, yes, a GUY made this batch! So ladies, get your man on this too! 

What you will need::
3/4 cup of unsweetened applesauce
3/4 cup of Greek yogurt(I used strawberry, and you can use any yogurt, but Greek yogurt is healthier!)
1/2 cup if granulated sugar
1/2 cup of all-purpose flour
1/2 cup of whole wheat flour
1/2 cup of unsweetened coca powder
1/2 cup of mini chocolate chips, plus a few more for sprinkling on top
2 large egg whites ( or 1 large egg)
1/4 cup of honey
2 teaspoons of vanilla extract
1 teaspoon of baking soda
1 teaspoon of baking powder
1/2 teaspoon of salt

Steps::
Start off by preheating your oven to 425 degrees. Spray your 12-count muffin pan with Pam or another nonstick spray.
In a large bowl, combine the applesauce, sugar, honey, egg whites, greek yogurt, and vanilla extract.  Whisk them all together until it becomes a nice and smooth mixture.

Now, in another bowl, add the flours, cocoa powder, salt, baking soda, and baking powder  and mix them all together.  Slowly add in the wet ingredients, being CAREFUL not to over-mix.  You can now add in the chocolate chips! 

Now scoop some of the batter and add it into the muffin pan, evenly dividing the batter, filling them all the way to the top. 

Bake for only 5 minutes at 425 degrees, and then reduce the temperature down to 375 degrees, continuing to bake for 13 more minutes.  
Do the toothpick test to see if it is done (insert a toothpick in the center of a muffin--if it comes out clean, they're done; if not, bak for another minute or two).  
Remove them from the oven and allow it to cool for a few minutes and then they are ready to eat!

The strawberry yogurt gives the muffin such a nice added taste! I mean, let's face, strawberry and chocolate always tastes heavenly together! And the applesauce makes for such a super moist muffin! These are too too yummy, and the best part, HEALTHY!

Friday Favorites!

Wow, it is almost March! Can you believe we're already almost in the third month of this new year?! Time flies by way too fast! Make sure you stop to enjoy the little things, like today's Friday favorites :)

Favorite Everyday Look:: I swear I've been wearing this look all season long! Shorts with tights, oxford, a simple tee, oversized cardigan, and a hat! (Bonus points if you wear a Yankees hat, hehe) It's the perfect comfy casual cute look!

Favorite Exercise:: Do these each of these stretches for a minute each, a few days out of the week! Om!

Favorite Idea:: Tis true! You never know what will happen, so leave space for that unknown fun!

Mani Monday:: Aztec effect

Happy Monday readers! Today's Mani Monday is a blast! I've already received a couple of compliments from strangers asking how to do them (hopefully you found my page and are reading now! Shoutout to you sweethearts!) It's a fun and favorite look of mine.  You need a more precise brush or point to make these designs, which thanks to my sweet sweet sister for getting me a whole set, I was able to play around and try it out myself! 
Now, like I've always said, practice makes perfect.  Even I, am not great at everything.  And these new bad boy tools are trickier than I thought. So as you will see in the pictures below, they aren't perfect triangles, but it still looks so awesome! Love your imperfections!
Now onto the design.  Good luck! I just googled tribal/aztec patterns and mimicked designs I liked.  You can do the same or try and follow my patterns!
I added a nice turquoise touch, because let's face it, who doesn't like turquoise?

OOTD:: Winter White

White is a color at its most complete and pure, the color of perfection. Some people look at you, thinking, "It's after Labor Day, why are you wearing white?!"  Well I personally love it. Pair it with neutrals, or a pop of color sweater, and it always works perfect; you stand out, it foes with anthing, strong impression, it is a bold statement, and plus, you match the snow!  
Today's outfit of the day inspiration comes from wearing white in the winter, and how I think it is a "Fashion Do" in today's world.
